National Soul Food Cook-Off Recipe for Old Fashioned Tea Cakes

Enjoy this recipe from National Soul Food Cook-Off contestant Elbert Mackey, who has graciously shared his version of Old Fashioned Tea Cakes.

“As you can see, tea cakes are very easy to make,” Mackey says. “This recipe comes very close to matching the taste of tea cakes I remember eating growing up in North Louisiana. I hope you get a chance to make a batch for you and your family to enjoy.”

Old Fashioned Tea Cakes

Ingredients:
4 cups bleached flour
1/4 cup pastry flour
Pinch of salt
3/4 cup Crisco butter flavor shortening
1 1/2 cup granulated sugar
1 teaspoon of nutmeg
3 large eggs
2 tablespoons of lemon juice
3 tablespoons of heavy cream
1 teaspoon of soda
1 teaspoon of baking powder
2 teaspoons of vanilla extract
2 teaspoons of butter flavoring

Procedure:

Preheat oven to 400 degrees.

In a large bowl, add flour, salt and shortening. Cut in like you’re making biscuits. Mix in sugar and nutmeg until combined. Set aside.

In a medium bowl, add eggs and rest of ingredients and whip until combined. Pour mixture over dry ingredients and mix well. Chill in refrigerator for 1 hour.

Fill an ice cream scoop with an equal amount of dough and form into 16 balls. Roll or pat out each ball into a 1/4-inch round and place on an ungreased cookie sheet 2 inches apart.

Bake 10 to 15 minutes or until edges are lightly browned.

Makes 16 cookies.
